Nettle + Mint Infusion

Adapted from: Jennifer McGruther

Serving: 2-3 servings

Mineral-rich Nettle is an amazing plant full of nutrients and vitamins, such as vitamin D, manganese, iron, copper and calcium to name just a few. Rudolph Steiner called the Nettle plant 'Heart of the world' because it radiated healing energy to people and the plants around it. Nettle is supremely nourishing to our bodies, and it is wonderful to use every day. Of the myriad benefits, Nettle can help restore and strengthen the adrenals and kidneys, nourish & rejuvenate the cardiovascular system, stabilize blood sugar and reduce fatigue. Mint can work wonders for the digestive system, reducing bloating, gas & discomfort. As it can also be a soothing herb, Mint can help relax the nervous system, aiding in sleep, an overstressed mind, and anxiety.

Ingredients:

4 cups of filtered water

½ cup organic dried nettle leaves

1/8 cup organic dried peppermint leaves – you can use up to ¼ cup depending on how strong of a minty taste you desire

1-2 tablespoons of pure local maple syrup

1-quart mason jar with a non-plastic lid

Create:

Add nettle and mint to the 1-quart mason jar. In a sauce pan, boil the water over high heat. Once boiling, add the hot water to the herbs. Cover tightly and let the herbs steep in the water for a minimum of 4 hours, no longer than 12 hours. When ready, strain the infusion through a fine-mesh sieve into a clean mason jar, adding the maple syrup to taste. Cover & store this nourishing infusion in the refrigerator for up to 3 days; Enjoy warmed up or cold.
